Black mustard seeds

Main mustard types

• Yellow/white mustard seeds are the mildest; they taste slightly sharp, lightly peppery, and a bit nutty, with gentle heat that builds slowly.

• Brown mustard seeds are hotter and more pungent, with a sharper, more intense heat and a slight bitterness compared with yellow seeds.

• Black mustard seeds are the strongest; they are very pungent, hot, and assertive, with a deep, almost smoky, earthy flavor when fried in oil.
